Diversity is the cornerstone on which I build my winemaking philosophy. This search for unique and new perspectives extends to the sourcing of my grapes. I’m always looking for freshness, uniqueness and contrast, which I have found in the cooler temperature vineyards of Elim for Sauvignon Blanc and Semillon contrasted with the concentrated reds of the drier Swartland.

By sourcing and selecting vineyard parcels from each of these areas, and pairing them with the most suitable varieties, I have produced four wines that embody the best of these unique and diverse regions.

Description

Grapes were harvested during the first week of February in the early morning hours to assure cool grapes arriving in the cellar. Grapes were whole bunched pressed to ensure gentle extraction. Stainless steel fermentation, 9 months on the lees in the tank and then bottled for secondary fermentation. The wine was then left for 4 years on the secondary lees before disgorgement took place in October 2022.

Some beautiful expressions of subtle strawberries and pomegranate, alive and zesty. The 4 years on the lees adds to the textural palate. Beautifully balanced and nuanced.

100% Pinot Noir, 12.0% abv, Natural Cork Closure, W.O Western Cape Vineyard Site: Robertson & Stanford.
